Wild Rice Tabbouleh Salad

WITH TEA HORSE ORGANIC WILD RICE

INGREDIENTS:

  • 2 cups of wild rice (previously cooked and cooled)
  • 1 bunch chopped curly parsley
  • 2 large tomatoes, diced
  • 1/2 English cucumber, diced
  • 3 ribs of celery, diced
  • 1/2 red pepper, diced
  • 1/2 small onion
  • Juice of 1 large lemon
  • 1 garlic clove, minced
  • 1/3 cup of Extra Virgin Olive Oil
  • 1 tbsp. Dijon Mustard
  • 1 tsp. Maple Syrup – to taste
  • 1/2 tsp. sea salt
  • Freshly grounded black pepper

DIRECTIONS:

  • Cook the wild rice per directions on the package. Let cool.
  • Finely chop the parsley using a sharp knife and add to a large bowl.
  • Finely chop onion, and dice tomatoes, cucumber, celery and red pepper and place into bowl with parsley.
  • In another small bowl, whisk lemon juice, minced garlic, olive oil, mustard, maple syrup, salt & pepper.
  • Combine all the ingredients thoroughly with the dressing and serve.
